1 kangaroo
meat and vegetables of choice

Take one 'roo (Bennett's wallaby) not too big, the old dark ones are a bit tough. Mince with a hand mincer to get the full value (of exercise). Straight 'roo meat makes patties very heavy, so lighten with about ⅓ beef or mutton. Small handful of suet is very helpful. Bacon if available. Most important, don't forget salt, good teaspoonful, onion is essential or carrot, in fact anything you want to clean out of the fridge!
If the fowls are laying, use two eggs. Bread (important); 2-3 slices put in a dish and soak in boiling water, drain and add. Mix ingredients thoroughly, use plenty of flour to shape same. Fry slowly in mutton fat (not too much fat). Serve from a casserole with plenty of gravy. All the ingredients can be varied according to taste and availability.
