1 1/2 pounds beef stew meat
1 tbsp cooking oil
1 cup carrots, thinly sliced
1 cup celery, thinly sliced
1 medium onion, thinly sliced
1/2 cup coarsely chopped green sweet pepper
1/4 cup snipped parsley
4 cups beef broth
1 can diced tomatoes (14.5 ounce)
1 cup spaghetti sauce
2/3 cup pearl barley
1 1/2 tsp dried basil, crushed
1 tsp salt
1/4 tsp pepper

Cut meat into 1 inch cubes. In a large skillet, brown meat in hot oil. Drain well. Meanwhile, in a slow cooker, combine carrots, celery, onion, green pepper and parsley. Add broth, tomatoes and can juices, spaghetti sauce, barley, basil, salt and pepper. Stir in browned meat.

Cover and cook on low heat setting for 10-12 hours or on high heat setting for 4 1/2 - 5 hours. Skim off fat.

Makes 6-8 servings
