Olive oil
Flour
1 brown onion
1 cup of diced celery
1 bunch of green onions
Fresh parsley
I medium bell pepper diced
1 fresh garlic diced
Chicken pieces( I use thighs)
Smoked sausage
Crab legs
Fresh shrimp
Dried shrimp
Creole seasoning
Garlic salt
Black pepper
Red pepper flakes
Kitchen bouquet to darken the roux
And gumbo file to thicken

Brown the chicken pieces in olive oil and set aside.
Put about 3/4 cup of oil in a deep 8 quart pot, add 3/4 cup of flour and stir over medium heat until the flour mixture turns a golden brown. Add the cut up vegetables and stir until lightly browned.add the chicken and sausage .add about two quarts of water.add the crab legs and the dried shrimp.Add spices. Let the pot simmer for several hours. You might have to add more water. Add the fresh shrimp at the very end and some green onions.
Serve with rice.
