1-12 oz. package of bacon
1 1/2 cups chopped onion
6 c. chicken broth
2 lbs. potatoes, peeled, cubed
2/3 c. butter
3/4 c. all purpose flour
4 c. milk
1 tsp. salt
1 tsp. ground pepper
1 c. diced cooked ham
1-8 oz. container sour cream
2 1/2 c. (10 oz.) shredded sharp cheddar cheese
3/4 c. chopped green onions

After cooking bacon, reserve 2 tbsp. of bacon grease. In a skillet, cook onion in bacon grease until almost tender. In a pot, mix onion, broth, and potatoes. Heat to boiling, reduce heat and cook 10 minutes or until potatoes are very tender. In the same skillet, melt butter over low heat. Stir in flour with whisk until smooth. Cook and stir 1 minute. Gradually stir in 2 c. of the milk. Pour milk mixture into potato mixture. Add remaining 2 c. of milk, salt, and pepper. Cook over medium heat, stirring constantly with whisk, until mixture is thickened and bubbly. Stir in ham, half of the bacon, sour cream, 2 c. of the cheese, and 1/2 c. of the green onion. Cook until thoroughly heated and the cheese is melted. Add the remaining bacon, cheese, and green onion to the top or to the top of each individual bowl.
