4 cups of instant rice
5 eggs
1/2 parmesan cheese
3 cups of bread crumbs
1/2 tsp salt
1/2 pepper
1/2 lb. chop meat
2 tbsp tomato paste
4 cups vegetable oil

Directions:
Directions:
Brown chop meat, add tomato paste, salt & pepper. Set aside to cool.

Cook rice according to directions. Set aside to cool.

Mix 2 eggs, add cheese. Combine egg mixture to cooled rice.

Mix remaining eggs.

Pour bread crumbs in a shallow dish

Put approximately 1/4 cup of rice in palm of hand, create a small well in the middle, add meat mixture, add another 1/4 of rice on top. Press firmly creating a baseball size ball. Roll in egg mixture, then in bread crumbs.

Carefully add a few of balls in hot oil. Turn frequently so they do not burn. When golden brown, remove and place on paper towel to remove any excess oil.
