40 oz. frozen shredded hash browns
1/2 cut chopped onion
1 cup shredded cheddar cheese
1 cup shredded Monterey jack cheese
1/2 tsp. pepper
1/2 tsp. salt
1 - 10 3/4 oz. can cream of mushroom soup
1/2 cup melted butter (1 stick)

Directions:
Directions:
Preheat oven to 450º
In a large bowl combine the hashbrowns, inions, shredded cheeses, salt and pepper.
Add soup and mix thoroughly
Add butter and mix it in
Grease 13x9 pan with additional butter
Transfer to 13x9 pan - DO NOT PACK DOWN
Bake 1 hour until golden brown
Let stand 5 minutes before serving

You can add more onions, or more cheese, or even throw in some diced up peppers. Want it spicier then add a generous pinch of cayenne pepper and add diced green chilies.
