Chicken Curry Recipe

2 T vegetable oil
2 lb chicken breast cubed
1 large white onion diced
1 pk golden curry mix (med hot)
1 can water chestnuts
1 can baby corn
1 cup frozen peas
1 can chicken broth 15 - 20 oz depending on consistency

3 to 4 cups rice

Directions:

In large skillet / fry pan
Heat up oil.

Add cubed chicken and cook until done.

Drain excess liquid

Return chicken to fry pan, add chicken broth, chopped onion, curry mix, water chestnuts, baby corn. Heat to boil then reduce heat to simmer for 20 minutes stirring occasionally. After 20 minutes add the peas and let cook for an additional 5 minutes. Sauce will thicken.

Prepare rice as directions on package

You can use a grater on the curry sauce to make it easier to mix.

Some people like the curry on top of rice others like it mixed in with rice. If you like it on top of rice it is better to be thicker. If you want to mix it in with the rice you want to thin it out by adding more chicken broth.
