1 c. coconut oil (softened briefly in microwave if it is solid)
1 tsp. pure vanilla (rum works well too!)
1 c. coconut sugar
½ c. sugar
2 eggs
2¼ c. flour
1 tsp. salt ( plain salt is fine)
1 tsp. baking soda
1 pkg. chocolate chips (preferably organic)
1 c. chopped nuts (optional)
Himalayan pink salt

Cream together coconut oil, vanilla, coconut sugar and sugar using a Danish dough whisk. A spoon will work too, but the Danish dough whisk makes it much easier. When adding the vanilla or rum, hold the teaspoon and let the vanilla flow freely. The one teaspoon is just a guideline. Stir in the eggs. Add the flour, salt and baking soda all at once. This is where the dough whisk really helps. Once the mixture is consistent in texture, stir in the chocolate chips (and nuts if using them). Drop by teaspoonful on a baking sheet lined with parchment paper. If not using parchment paper, grease the cookie sheet. Flatten the dough balls slightly. In a small bowl, grind about a teaspoon of Himalayan pink salt. Sprinkle a little bit of pink salt on the top of each cookie. Preheat oven to 375ºF. Bake each batch for 10 minutes or until the desired level of doneness.
