3 oz. pkg. mixed salad greens
⅛ c. fresh mint, leaves removed from stems, chopped
2 c. seedless watermelon, ¾" cubes
2 c. cherry tomatoes
1 medium cucumber, cut into ¾" pieces (about 2 c.)
4 oz. Blue cheese, crumbled
1 tbsp. extra-virgin olive oil
1 tbsp. fresh lemon juice
¼ tsp. salt
¼ tsp. pepper

Directions:
Directions:
Put lettuce, mint leaves, tomatoes, watermelon, cucumber and blue cheese in a large bowl.
In a small bowl, mix together olive oil, lemon juice, salt and pepper.
Drizzle the dressing over the salad and toss gently to coat.
