Directions: |
Directions:Soak live crabs in hot tap water in sink approx 3-5 minutes. This is to "deaden" them. Using a large pan (Dutch oven works well) slightly brown garlic in half quantity of olive oil.
After crabs are dead, remove back shell, apron, and dead-man (lungs) and discard but save any juices from the crab. Place crabs and juices in pan with garlic and remaining oil (large crabs can be broken in half). Add all other spices.
Cover and bring to a vigorous boil. Thin by adding wine to saute and follow by adding seafood broth (and Tomato Sauce if desired). NOTE: You may need to add some water to extend the content of the liquid sauce)
Reduce temperature to low and simmer for about 45 minutes. Drizzle with remaining olive oil and garnish with fresh basil and/or parsley.
