Ingredients:
Ingredients:
4 eggs
3 cups sugar
4 tsp vanilla
1 large can of evaporated milk (10 oz)
1 quart of half and half
1 pint heavy whipping cream
Fill to the line of the canister with milk

Rock Salt
Bag of cubed ice

Hot Fudge
1 pkg of milk chocolate chips
1 cup of Karo syrup
I can of condensed milk.

For Mocha Flake Ice Cream (Tom's favorite)
2 1/2 T powdered instant coffee
2 squares of unsweetened chocolate

Directions:
Directions:
Put Ice Cream make canister in freezer to chill for 30 minutes before starting.

Beat eggs until light colored. Turn mixer on slow and add sugar, vanilla, evaporated milk, half and half, whipping cream. Mix until ingredients are completely incorporated. If you're making Mocha Flake, add 1/2 tsp of water to coffee to melt powder and add to mixture.

Add ingredients to canister. Pour milk into canister to fill line. If you are making Mocha Flake Ice Cream, place the canister in freezer for 20 minutes to chill. You don't have to chill canister if you are making vanilla. Remove canister from freezer. For Mocha Flack, melt chocolate squares. Drizzle into cooled mixture. Place Ice Cream Make in the kitchen or laundry room sink. Put lid on and place in Ice Cream Maker. Attach lid, and twist to lock into place.

Fill space between Ice Cream Maker and canister with a layer of ice, then rock salt, ice, then rock salt, etc, until it reaches the top.

Turn on/plug in Ice Cream Maker. The canister will start to spin around. The process takes approximately 20-30 minutes. As the ice melts, add additional ice and rock salt (layering) when needed to keep ice pressing against the canister all the way to the top. When the ice cream is complete, the machine will stop. Unplug right way or it will burn out the Ice Cream Maker motor.

Hot Fudge
Melt chocolate chips, Light corn syrup and condensed milk on the stove top in a small pan until completely melted and incorporated.

Top with desired condiments: nuts, whipping cream, cherries, sprinkles.

Personal Notes:
There is nothing better than homemade ice cream. I first learned to make this with a hand cranked machine. The electric machines make it so much easier. However after all the work cranking the machine, I felt I had earned a larger bowl of ice cream!!
