2 cups Plain Flour
1-cup sugar
2 cups mixed fruit – raisins / sultanas / cranberries
Mixed Spice & Ginger
2 tablespoon Butter
¾ cup Milk
1 teaspoon soda
3 teaspoon Parisian Essence
1 teaspoon instant coffee

Directions:
Directions:
Mix melted butter and milk
Dissolve soda, parisian essence and coffee in a little water
Mix into milk mix
Mix remainder of ingredients and place in calico cloth, and tie firmly
Bring large saucepan of water to boil, place saucer in bottom and add pudding.
Tie lid down or put heavy weight on lid and simmer (Slow roll) for at least 2 hours, do not remove lid!

Make sure lid is sealed tight, if it is not the water will get into the pudding through the cloth and it will fall apart and be soggy when taking out of cloth.
