1 lb bacon, cheap thin sliced
15 medium-size Jalapeno peppers
8 oz cream cheese (room temperature)
8 oz Mexi Blend Cheese (or spicy Velveeta)
1 cup pulled pork or browned-chopped Sausage
2 tbsp your favorite dry rub
2-3 dashes of Liquid Smoke
¼ cup Water

Wearing latex gloves, cut each pepper in half length-wise and scoop out seeds/ribs with a spoon.

Combine cream cheese. Mex-Cheese blend, rub, and meat until thoroughly mixed. Fill each pepper half with approx 1-2 tbsp of filling.

Wrap each pepper half with 1/2 - 1 strip of bacon, add water and Liquid Smoke to bottom of broiling pan, and place on bake rack over slow heat at 225º for 1 - 1/2 hours (until bacon is somewhat crisp).
