1 1/4 lb Whole milk Ricotta
2 eggs well beaten
1 3/4 tsp. salt
1/4 tsp. black pepper
Parsley (about 1/3 cup)
1/3 cup Grated cheese
1 box large stuffing shells
8 oz Mozzarella cheese
Sauce (see spaghetti sauce recipe)

Directions:
Directions:
Cook shells per the package directions, rinse and drain.

Preheat oven to 350º.

Mix all ingredients, except the Mozzarella cheese and sauce, in a bowl.

Put enough sauce in a large baking dish, 13x9, to cover the bottom. Fill each shell with the Ricotta mix and place in dish cheese side up. Spoon sauce over each shell to cover. Sprinkle with Mozzarella cheese. Cover and cook until shells are heated through, about 25-30 minutes.
