Ingredients:  
2 boxes frozen spinach, cooked, chopped, well-drained.
2 cups Pepperidge Farm Herb-Seasoned Stuffing Mix
6 eggs,beaten
2 large onions, chopped fine
3/4 cup melted butter
3/4 tsp. garlic powder
1/2 to 3/4 cup grated Parmesan cheese
1/2 tsp. Thyme
1 tsp. black pepper
1/2 cup chopped parsley( optional)

Directions:

Mix ingredients well. Form into small balls. Place on a cookie sheet,freeze. After frozen,place in plastic bag in freezer until needed. Bake frozen at 375ºF for 20 min.

Actually I found this in my recipe box with my mom's name on it. We have a Spinach Ball listed on one of our menus. Don't know if this is the one but I'm sure it may be close. I love the idea of freezing ahead and having on hand for "unexpected" Happy Hours!
