Poaching Liquid:
1 C unsweetened coconut milk
1/2 C low sodium chicken broth
1/4 C minced shallots
2 T fresh ginger, minced
1 T minced garlic
2 t sugar (or splenda)
1/2 t red pepper flakes

4 boneless, skinless chicken breasts, cut in half
1 T fresh lime juice
1/2 t cornstarch

Garnish - fresh basil sprigs, sliced chilies

Directions:

Combine poaching ingredients in a large saucepan over medium heat and bring to a simmer.

Add chicken, cover, and simmer for 10 mins. Remove chicken and set aside. (Make sure chicken is cooked through.)

Combine lime juice and cornstarch in a small bowl. Stir into poaching liquid. Continue to stir until sauce has thickened. Add chicken back to the saucepan to coat.

Serve over soba noodles (or gluten free rice noodles); garnish with basil and chilies.
