Ingredients: 1/2 lb. maple-flavored bacon, chopped 1 cup chopped onion 1 Granny Smith apple, peeled and chopped 1 medium sweet potato, peeled and diced 2-14 oz. cans chicken broth 2-14.75 oz. cans cream style corn 14 oz. can whole kernel corn, drained 2 cups half & half or milk 2 cups cheddar cheese, finely shreded salt, pepper and hot sauce to taste large bowl of freshly popped popcorn

Directions:Put the chopped bacon in a 6-quart soup pot under medium heat. Cook until the bacon is done and the fat has been rendered out. Only if the bacon is very fatty, drain some of the excess fat out. Add the onion, apple and sweet potato. Stir and sauté for approximately 10 minutes. Add the chicken broth and simmer until the vegetables are soft, about 10 minutes. Add the cream style corn, whole kernel corn, half & half and cheese. Stir until the soup is warmed through and the cheese is melted. Season with salt, pepper and hot sauce to taste. Put the soup into bowls and add 1/4 cup or more of the popcorn as garnish. |

Notes: A local soup restaurant sponsored a contest for "The Best Children's Soup" recipe. Mary, 10 years old at the time, worked hard, together with her mom. This was the final recipe, and she even wrote a story to go along with it. For many years we would make it in her class, while reading her story. The students loved the activity and loved the soup even more. We still make it every Halloween. It might seem a little odd, but everyone who tastes it, loves it, and it is well worth making!
