4 large chicken breast (sliced across in half, and pounded to tenderize)
1 cup of flour
4 tbsp of butter
2 tbsp of olive oil
salt and black pepper to taste
1 package of mushrooms (any kind, sliced) You could also use canned. Just drain.
1/2 cup of white wine. (dry)

Preheat oven to 400

Coat chicken on all sides with flour (I add salt and pepper to flour)

Heat 1/2 oil and butter in frying pan. Add mushrooms, cook until color has changed, set aside. Add remaining oil and butter then chicken, a few at a time. Brown on both sides, and remove.

After all chicken is browned, add wine. Scrape any remaining chicken while stirring wine.

Place chicken and mushrooms in a baking dish. Add wine and cover with aluminum foil. Cook for 30 minutes. You can garnish with parsley.
