Pastrami Muffins Recipe

Meat Mixture:
Approximately 2 lb. ground chicken/meat
11/2 c. seltzer
2 eggs
1 c. bread crumbs
11/4 to 11/2 c. ketchup
1/2 T. salt
1/8 t. garlic powder
1/8 t. paprika

Sauce:
11/2 c. orange juice
6 T. oil
11/2 c. brown sugar
4 t. honey

4 packages long pastrami strips

Directions:
Directions:
Combine all meat mixture ingredients in a bowl. Bring to boil all of sauce ingredients, then simmer for 5 minutes.In muffin pans, line each circle with a pastrami strip around the sides(the bottom will remain open). Fill each hole with meat mixture. Add 2-3 T. of sauce over each muffin. (To prevent dripping and spills, place muffin pans on cookie sheet.) Bake covered for approximately half an hour. Bake uncovered for 10 more minutes. Serve hot and add one more T. sauce before serving (optional).
