2 lbs. button mushrooms
1 cup Italian bread crumbs
4 Italian sweet sausage links
2 garlic cloves
1/4 grated cheese (Parmesan
3 tbsp. olive oil
1/4 parsley
1 - 2 eggs

Directions:

Clean mushrooms with a wet clothe
Remove stems (save to add to recipe)

Combine bread crumbs, cheese and parsley into a bowl. Set aside

Chop mushroom stems into small bits.

Remove casing from sausage links.

Place 2 tbsp of olive oil in heated frying pan. Add garlic and chopped stems. Saute until stems become translucent. Add sausage. Begin breaking sausage into small pieces. Cook through. Drain and place into bread crumb mixture.

Combine 1-2 eggs (depending on size of eggs) and 1 tbsp of olive oil. Mix well. Begin stuffing the mushrooms with mixture. When complete, top the mushrooms with the remaining olive oil evenly on each one.

Place in preheated oven (350) for approximately 20 minutes.

My mom would make these for every holiday. Sometimes she would leave out the sausage and would put pepperoni instead, or for Christmas Eve, she would use crab meat.
