2 1/2 cups oat bran cereal
1 Tbsp baking powder
1/2 cups chopped nuts
1/4 cup brown sugar or honey or molasses
1 cup or more of chopped apples or zucchini
1/4 cup dried fruit
1 1/4 cup skim milk
4 oz egg substitute or two beaten eggs
3 tsp canola oil

Directions:
Directions:
1. Heat oven to 425º.
2. Mix oat bran, nuts, fruit, baking powder.
3. Stir in sweetener.
4. Mix eggs, milk, oil and blend with bran mixture.
5. Use sprayed nonstick muffin tins or line with cupcake papers. Fill.
6. Bake 15-17 minutes. Should be moist but not wet.
