2 cups Celery chopped
2 cups Carrots chopped
2 cups Onions/Shallots chopped
2 cloves Garlic chopped
1 cup Peeled Tomatoes diced
4-5 small/-medium Potatoes diced
1 medium can Green Beans
1 medium can Corn
2 cups Rose or White Wine
2-3 cups Bouillon/stock, Broth, and/or Water
2 tbsp Butter or oil
1 lb cooked Italian Sausage
1 lb cooked Smoked Sausage or Kielbasa
1 dozen scrubbed mussels, and/or clams, small Shrimp (shelled)
1 lb White Fish (cod or Rock) cut into 1" square chunks
6-12 cleaned and quartered raw Hard-crab (optional)
6-8 slices cooked Bacon (optional)

Spice to Taste:
Salt & Pepper, Fillet, Old-Bay, Bay Leaf, Oregano, fresh Basil and/or Parsley, Hot Sauce

Directions:
In a 10 quart stock pot, sauté onions, celery, carrots, and garlic in butter/oil for approx 15 minutes.

Cut sausage and kielbasa into bite-size pieces and sauté together with cut-up bacon. Stir in sauteed vegetables.

Add all remaining ingredients (except seafood). Add spices to taste; simmer over low heat 1 - 2 hours stirring often.

Add seafood approximately 10 minutes before serving. Serve over rice.
