1 cup light brown sugar
1 cup sugar
1 1/2 c. vegetable oil
3 large eggs
3 cups flour
1 teaspoon soda
2 teaspoons cinnamon
1/2 teaspoon. apple pie spice
1/2 t. salt
5 fresh Granny Smith apples
1 1/4 cup chopped walnuts
2 1/4 teaspoons vanilla

Glaze:
1/2 stick butter
1/4 cup sugar
1/4 cup light brown sugar
pinch salt
1/2 c. heavy creamm

Directions:
Directions:
Preheat oven to 325 degrees. Put sugars and oil in mixing bowl and beat until
well blended Add eggs one at a time, beating well after each. Sift together flour, soda, cinnamon, apple pie spice and salt. Gradually add to sugar and egg mixture; mixing until well blended. Stir in apples, nuts and vanilla. Pour into a buttered 9 x 13" baking pan and bake for about 1 1/4 hours or until a toothpick inserted into the center of the cake comes out clean. Remove fro the oven and cool in the pan while you prepare the caramel glaze.

Caramel Glaze:
Melt butter in saucepan, add both sugars and salt. Stir until blended and cook over medium low heat for 2 minutes. Stir in heavy cream and boil for 2 minutes, stirring constantly. Remove from heat Use a skewer to poke holes all over the top of the cake and pour glaze over cake. Let cake rest at least an hour to absorb glaze.
