Cookie:
2 c brown sugar
1 cup shortening
3 eggs
1/4 c milk
1 tsp vanilla
2 tsp baking powder
3 c flour give or take

Filling:
1 cup dates, chopped (you can replace with raisins)
1/2 c sugar
1 Tbsp flour
1/2 water

Directions:
Directions:
PREHEAT oven to 350º.
Cream brown sugar and shortening.
Add 3 eggs.
BEAT.
Continue to beat and add milk and vanilla.
Sift flour and baking powder.
Add until consistency to roll out.

To make filling: put all ingredients in a saucepan.
BOIL gently, stirring constantly until thick.
Cool.

Roll out cookie dough very thin.
Cut out circles.
Put one cookie on pan.
Place about 1 spoonful filling in center.
Top with a second cookie.
Seal edges by pressing with finger gently.

BAKE until edges start to brown.

Use larger circles and fold over for "smiles".
Grandma always used jam for the last few cookies when she ran out of filling. They were very good too!
