3-4 large zucchini, peeled
2 large parsnips, peeled
1 large carrot, peeled
2 medium potatoes, peeled
1 large onion, diced
oil for sauteing
salt and pepper to taste
water

Directions:
Directions:
In a large 6-8 quart pot, saute onion in oil over low flame until translucent. Meanwhile, shred all other vegetables in a food processor (either coarsely or finely shredded). Add shredded vegetables to sauteed onions and mix up all contents of pot. Add approximately 3-4 quarts water (more or less is fine depending on how concentrated you want the soup to be). Add salt and pepper to taste. Cover and cook on low flame for 3 hours. Blend with immersion blender. Freezes beautifully!
