Cake :
1 - 1/2 c Flour
2 - 1/2 T Baking Powder
3/4 c Sugar
1/4 tsp Salt
1/4 c Shortening
1 Egg
1/2 c milk

Topping:
3 T Flour
1/4 c Sugar
1/2 tsp Cinnamon
2 t soft margarine
Chopped pecans or walnuts for the cake and ground pecans or walnuts for topping if desired

Directions:

Set oven to 375°

Sift flour before measuring. Add baking powder, salt and sugar, sift into bowl. With pastry blender (or two forks) cut in the shortening until coarse. Beat egg and combine with milk. Pour in all at once into the flour mixture. Stir until just mixed. Pour batter into 8 x 8 baking pan, spread into corners with spatula. Sprinkle topping over batter.

Bake 15 – 20 minutes until golden brown.

You can mix the topping and the dry ingredients including the shortening before hand and put into baggies. Add the egg and milk just before you’re ready to bake it.
