1 small onion, chopped
2 tbsp. chopped green pepper
2 tbsp. oil
2 cups cooked rice
2 tbsp. soy sauce
3 eggs, beaten

Add-ins: Sliced mushroom, water chestnuts, added with the rice and soy sauce

Directions:
Directions:
Cook and stir onion and green pepper in oil in large skillet until onion is tender, about 3 minutes. Stir in rice and soy sauce. Cook over low heat, stirring frequently, 5-7 minutes. Move rice to the sides of the skillet to leave a crater in the center. Pour beaten eggs into the crater and cook stirring constantly until eggs are almost cooked through. Stir into the rice and continue cooking until the eggs are finished cooking. In total the eggs should take about 4-5 minutes to be cooked. Serve warm!
