4 c. old-fashioned oats
1 c. sliced almonds
1/2 c. brown sugar
1/4 tsp. salt
1/8 tsp. cinnamon
1/3 c. vegetable oil
1/4 c. honey
2 T. sugar
4 tsp. vanilla

Directions:
Preheat oven to 300 and position rack to middle of oven. Lightly spray large baking sheet with non-stick spray. Mix first 5 ingredients in large bowl. In small saucepan, combine oil, honey and sugar and bring to simmer over medium heat. Remove from heat and stir in vanilla. Pour liquid over oat mixture and stir well. Using hands, toss mixture until thoroughly mixed. Spread granola on prepared baking sheet. Bake until golden brown, stirring every 5 minutes, for a total of about 20 minutes. Cool granola completely and store in large Ziploc bag.
