4 c. sliced, peeled peaches
1 T. lemon juice
1 1/4 c. sugar
3 T. quick-cooking tapioca
1/8 tsp. salt
1/8 tsp. nutmeg
orange or apricot marmalade
double-crust pie pastry
2 T. butter

Directions:
Directions:
Preheat oven to 425. Gently toss peaches with lemon juice. In separate bowl, combine sugar, tapioca, salt and nutmeg. Add peaches and mix. Line pie plate with pastry. Brush some orange or apricot marmalade on the bottom crust. Put filling in to unbaked shell and dot with the butter. Place top crust and cut slits for steam. Bake for 40-50 minutes.

This is one of my favorite recipes of Geri Lawson's....I make it a lot in the summer. One of our local churches sells CO peaches as a fundraiser, so when the order arrives, there are many pies to be made!
