1 tbsp. olive oil
6 garlic cloves, minced
1/4 tsp. red pepper flakes
Salt and ground black pepper
1 can (28 oz.) crushed tomatoes
3 cups water
12 oz. ziti (3-3/4 cups) or penne
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
1/4 cup minced fresh basil
1 cup shredded mozzarella cheese

This can be assembled and cooked in about half an hour if you preheat your oven and measure your water and pasta before you begin cooking. Prep the basil and Parmesan while the pasta cooks. If you do not have an over-safe skillet, a 2 qt. casserole dish may be used for the baking step.

1. HEAT OVEN. Adjust the oven rack to middle position an heat oven to 475º F.

2.SIMMER PASTA. Combine oil, garlic, red pepper flakes, and 1/2 tsp. Salt in 12-inch oven safe nonstick skillet and sauté over medium-high heat until fragrant, about one minute. Add crushed tomatoes, water, ziti and 1/2 tsp. Salt. Cover and cook, stirring often and adjusting heat as needed to maintain vigorous simmer, until ziti is almost tender, 15 to 18 minutes.

3. ADD CHEESE AND BAKE. Stir in cream, Parmesan, and basil. Season with salt and pepper to taste. Sprinkle mozzarella evenly over the ziti. Transfer skillet to oven and bake until cheese has melted and browned, about ten minutes. Serve.
