Thinly sliced Cabbage. 4 Cups Approximately
White potatoes cubed then boiled. 1&1/4 lbs Approximately
Butter. 1/2 Stick
Finely chopped chives. 1/4 Cup
Grated cheese*. ½ plus ¼ Cups
Grated nutmeg**. 1/4 tsp
Sea salt. 1/2 – 3/4 tsp to taste
Course fresh ground pepper. ¼ - ½ tsp to taste
Shredded Carrots***. 1 Lg. – 3 Sm
Directions:
Directions:
Cook cabbage in lg. pot if boiling water until tender, include carrots if using.
Transfer to colander with slotted spoon. Let drain
Use same water to boil potatoes until tender. (Save water for soup)
Drain & Mash in pot with butter (you can add 1/8 cup of cream)****
Fold in cabbage, Chives, Sea Salt, Pepper, Nutmeg & ½ cup of Cheese.
Blend all ingredients thoroughly.
Lightly press into Buttered casserole & top with ¼ cup of cheese.
Cover with lid or foil and bake at 350 until it bubbles & browns.

*: Originally Cheddar, I like Parmesan & Some like Swiss.
**: Nutmeg is an add on by one grandmother, the other preferred caraway seeds 1/8 tsp.
***Carrots an option that can be added to sweeten up the flavor.
****Try adding ¼ cup sour cream

Most Scots would cook too many mashed potatoes, my Grandmothers always did, and then there would be potatoes available for this, Sheppard’s pie, Cullen skink or whatever.
