1 small red onion
3 cups water
1 lb. tomatoes,cut into 1/4 " wide pieces
3 Tbl. fresh lime juice
3 Tbl. finely chopped cilantro
1 Tbl. finely chopped, seeded jalapeno chilies
1 Tbl. olive oil
Salt
2 -1 1/2" thick T-bone or porterhouse steaks,room temp.
Fresh ground pepper

2 white onions,cut into 1/16 to 1/8" wide rings
1 1/2 cups milk
1 1/2 cups sifted all purpose flour
1/4 tsp. chili powder
1 Tbl. plus 1 tsp.cornstarch
1 1/2 tsp. salt
1 1/2 tsp. ground cumin
1 tsp. (generous) sugar
1 tsp. (generous) Hungarian hot paprika

For Steak;
Soak red onion in water in large bowl for 1 hour. Drain thoroughly. Transfer to medium bowl. Add tomatoes,lime juice, cilantro,chilies, oil and salt and toss well. Cover salsa and refrigerate until ready to serve.(Can be prepared 6 hours ahead).

Prepare barbecue (medium high heat). Season steaks with salt and pepper. Grill steaks to desired doneness about 7 minutes per side for medium -rare. Transfer to plates. Drain salsa and spoon over steak. Serve immediately with Red Chili Onion Rings

Soak onions in milk in large bowl for 1 hour. Drain thoroughly. Mix all remaining ingredients except oil in another large bowl. Dredge onions in flour mixture,shake off excess. Heat oil in heavy saucepan to 360ºF. Add onions in batches and cook until golden brown,about 45 seconds. Transfer to paper towels using slotted spoons;drain well, Serve hot.
