One 1.5 pound lobster(precooked) cleaned by Joe
1 lb. campanella pasta
Cheddar cheese
Gruyere Cheese
Parmesan cheese(set aside some grated and some shaved)
1- 8 oz. pkg cream cheese
1quart Heavy Cream
Bread Crumbs
Butter
S&P to taste

Directions:
Begin by warming heavy cream (seasoned with S&P) but do not boil. Undercook the pasta( under cooked not al dente). Cook only 3 minutes after water boils again.
Otherwise pasta will be mushy after baking.
Once cream simmers and thickens,add the cheeses,Use high quality cheese for best results. Let cooked lobster pieces simmer 3-4 minutes in cream sauce.Reserve a few pieces of lobster for garnish. Toss the cream sauce with parboiled pasta and layer in greased casserole. Top the mac and cheese with cooked lobster meat and add buttered bread crumbs and grated Parmesan cheese. Bake at 400ºF until warm and crispy,about 8 minutes.

We served this at The Christmas Party of 2015 hosted at the McLaughlins and to quote Pat ,"The Mac and Cheese kicked my butt". Good way to describe it..while delicious.. it is still rich...and heavy...and will put you right to sleep.
