3 cups cubed fully cooked smoked boneless ham
2 cup shredded Swiss cheese (8 ounces)
1/2 cup chopped green onions or chopped onion
2-3 cups vegetables, if desired
1 cup homemade quick biscuit mix (see below)
2 cup milk
1/2 teaspoon salt, if desired
1/4 teaspoon pepper
4 eggs
Salsa, optional garnish

Homemade Quick Biscuit Mix:
Makes 2 cups

2 cups flour
3 tsp baking powder
1 tsp salt
2 Tbsp butter

Mix all ingredients. Blend until mixture resembles fine crumbs. Use a substitution for Bisquick mix. Store in a cool, dry place.

Directions:
Heat oven to 400ºF.
Grease 9 x 13 cake pan. Sprinkle ham, cheese, vegetables and onions into cake pan. Stir Biscuit mix, milk, salt, pepper and eggs until blended. Pour into cake pan. Bake 35 to 40 minutes or until knife inserted in center comes out clean. Cool 5 minutes. Garnish with salsa.
