6 cups self rising cornmeal
2 cups self rising flour
2 cups chopped onions
4 eggs
⅔ cup cooking oil
1 ¼ cups buttermilk
Water as needed

Cooking oil for deep fryer

Directions:
Directions:
Heat cooking oil in deep fryer to 325º

Mix above ingredients until well blended. This will make a stiff dough. Spoon by using a tablespoon and drop into heated oil. When the hush puppies are done they will float to the top and will be golden brown. If you make them too large they won't get done before they are brown.

These are very good. The recipe comes from McCollum's Catfish Restaurant.
Allan and Marie McCollum were friends of Wade's daddy, Oscar Slayton. They are both deceased now.
