1½ c sugar
4 T flour
1 egg, well beaten
3 T lemon juice
2 t lemon rind
⅛ t salt
2 c raisins
2 c water
dough for double crust

Directions:
Directions:
Mix sugar, flour and egg. Add lemon juice, rind, salt, raisins and water. Cook over low fire or double boiler for 15 minutes, stirring often. Cool. Line pan with pastry, pour in filling and place strips of pastry over filling in lattice design. Can be covered with whole pastry, but cut several slits in top. Bake in hot 450° for 10 minutes, reduce heat to moderate (350°) and bake 20 minutes longer or until crust is golden brown.
