1½ c. onion, finely chopped
8 hard-boiled eggs, finely chopped
¼ c. mayonnaise
8 oz. cream cheese, softened
1 c. sour cream or crème fraiche
2 tbsp. fresh dill, finely chopped
2 tsp. fresh lemon zest, finely grated
3 tbsp. fresh chives, finely chopped
2 small jars of salmon roe, black, red or golden lumpfish caviar, drained
garnish: lemon wedges, parsley sprigs

Directions:

Spread onion on paper towel to absorb moisture.
Mince eggs and combine with mayonnaise; set aside.
Beat cream cheese and sour cream together until very smooth.
Add dill, lemon zest and chives, mixing well.
Lightly coat a 9" round springform pan with a little mayonnaise or unflavored vegetable oil.
To assemble: spread egg mixture evenly over bottom of pan and sprinkle drained onions on top.
Drop cream cheese mixture by spoonfuls on top of onion layer and spread gently with the back of a spoon or spatula.
Cover with plastic wrap and chill at least 3 hours or overnight.
Before serving, gently spoon two different color caviars over the cream cheese in concentric circles, making sure they don't intermingle.
To release the pie, run a knife along the inside of pan, carefully remove sides of the springform pan.
To serve, place caviar pie on large platter; garnish with lemon wedges and parsley around edge.
Serve with unsalted crackers, toast tips or blinis.
