1 pint of oysters - about 2 dozen
¾ c. all purpose flour
⅛ tsp. each of salt and pepper, or to taste
2 eggs, whisked
1 c. dry bread crumbs
⅔ c. Romano cheese, grated
¼ c. fresh parsley, minced
½ tsp. garlic salt
2 tbsp. olive oil

Jalapeño Mayonnaise:
¼ c. mayonnaise
¼ c. sour cream
2 medium jalapeño peppers, seeded and finely chopped
2 tbsp. milk
1 tsp. lemon peel, grated
salt and pepper, to taste
Mix these ingredients together for dipping sauce.

Directions:
Use 3 bowls as follows:
Flour, salt and pepper in first bowl.
Whisked eggs in second bowl.
Bread crumbs, Romano, parsley, garlic salt in third bowl.
Coat each oyster in flour, dip in egg, then coat in bread crumb mixture.
Place on a cookie sheet, sprayed lightly with Pam®.
Drizzle with olive oil.
Bake in 400ºF oven for approximately 10-15 minutes.
Serve with the Jalapeño Mayonnaise, or use a red sauce.
