1 8.5 oz baguette, sliced into 1/2 inch thick slices
4 T. olive oil, divided
1 8 oz. pkg. cream cheese, softened
1 C. sour cream
1/2 cup plus 2 T. Dijon mustard, divided
2 T horseradish
1 tsp. garlic powder
1/2 tsp black pepper
1 lb thinly sliced deli roast beef
2 T. white-wine vinegar
3 C baby arugula

Preheat oven to 350º. Brush both sides of baguette slices, using 2 T. olive oil, and place on a cookie sheet. Bake for 10 minutes; set aside. In a medium bowl, combine cream cheese, sour cream, 2 T. Dijon mustard, horseradish, garlic powder and pepper. Beat at medium speed until smooth. Spread about 1 tsp. remaining 1/2 cup Dijon mustard on one side of each prepared baguette slice. Top with roast beef. Spoon or pipe cream cheese mixture onto top of roast beef. Just before serving, in a medium bowl, place remaining 2 T. olive oil and white-wine vinegar, whisking to combine. Add arugula, tossing gently to coat. Place arugula on top of cream cheese mixture. Serve immediately.
