4 English muffins or toast
4 slices bacon
4 poached eggs
1 recipe holland aise. Sauce

Directions:
Poach eggs
Place muffins on plate
Cook bacon
Put eggs bacon on muffins then add
Holland aise sauce
3 eggs
1/4 tsp salt
2tabsp lemon juice
Dash cayenne
1/2 cup butter
Blend egg yolk ,lemon juice,salt and cayenne in a small bowl.whisk set aside.melt butter in double boiler add yolk mixture whisk stir until thickened pour over muffin, egg and bacon which is on muffin. Enjoy
