4 cups shredded hash brown potatoes
1 1/2 cups diced, fully cooked smoked ham
1 1/2 cups shredded Swiss cheese
1 can artichoke hearts, drained and coarsely chopped
3 green onions chopped
5 large eggs
1/4 cup milk
1/2 cup cottage cheese
1 tsp. ground mustard
1/4 tsp pepper

1. Spray an 11 x 7 baking dish with nonstick cooking spray
2. Mix diced ham, artichoke hearts and green onion in a bowl
3. In another bowl, beat eggs, milk, cottage cheese, mustard, and pepper until blended
4. Layer 2 cups frozen hash brown potatoes in 11 x7 dish. Then layer 1/2 ham-artichoke mixture
5. Top layer with Swiss cheese, then layer the rest of the ham-artichoke mixture. Then layer with the rest of the hash browns
6. Pour the egg mixture over the layers. ( the cottage cheese may sit on top. It's OK!
7. Cover with foil and refrigerate overnight
8. When ready to bake, preheat oven to 350 degrees F.
9. Bake 350 for 55-60 minutes or until eggs are set
