1/2 cup cocoa
1 cup hot water
1/2 cup butter or margarine,softened
1 1/4 cup sugar
2 eggs
1 1/3 cup flour(all purpose)
1 tsp. baking soda
1/4tsp. baking powder
1/2 tsp. salt

Whipped Cream Filling
1 1/2 cups whipping cream
1 Tbl. powdered sugar
2 Tbl. peppermint extract
green paste food colorig

Chocolate Frosting
2 (1) oz. squares unsweetened chocolate,melted
2 cups sifted powdered sugar
2 Tbl. hot water
1 egg white
1/3 cup butte ror margarine,softened
1/2 tsp. vanilla extract

Directions:
Directions:
Combine cocoa and hot water,stirring until smooth. Cream butter;gradually add sugar,beating well at medium speed of an electric mixer. Add eggs,one at a time;beating well. Combine flour and next 3 ingredients;add to creamed mixture alternately with cocoa mixture,beginning and ending with flour mixture.

Pour batter into 3 greased and floured 8" round cake pans. Bake at 350ºF for 15 minutes. Cool in pans 10 minutes;remove from pans,and cool completely on wire racks. Spread Whipped Cream Filling between layers;spread frosting on top and sides. Garnish, if desired.

Whipped Cream Filling
Combine first 3 ingredients in a medium bowl;add a small amount of food coloring and beat until soft peaks form. Makes 3 cups

Chocolate Frosting
Combine first 3 ingredients in mixing bowl. beat at medium speed of an electric mixer until smooth. Add next 3 ingredients;beat until smooth. Set bowl in pan of ice water, and beat until frosting is thick. Yield 1 3/4 cups

May garnish with chocolate curls. (See recipe in Miscellaneous)

A three layer cake sounds like quite an ambitious project...but I'm sure it was accomplished. If you want to go to the trouble of making the chocolate curls I have added them to the Miscellaneous section. But don't feel compelled. Does anyone remember if we made these?
