1 cup diced bacon
4 T. bacon fat
1 cup celery, chopped
1 medium onion, chopped
1 1/2 T. flour
3 tsp. salt
2/3 cup cider vinegar
2/3 cup sugar
1/2 teaspoon pepper
1 1/2 cups water
8 cups cooked potatoes, sliced

Directions:
Directions:
Preheat oven to 350º.Sauté bacon until crisp. Remove from pan. Sauté onion and celery in bacon drippings until translucent, about 5 minutes. Add flour, stir until smooth, add sugar, salt and pepper. Add water. Bring to boil. Meanwhile, put chopped potatoes and bacon in casserole dish. Pour boiling mixture over potato mixture. Bake for 30 minutes.
