Walt's Spaghetti Carbonara Recipe

1lb bacon, diced; easier to cut while partially frozen
1 medium onion, minced
1 cup white/rose wine
1.5 tsp coarse ground pepper
1 lb Capellini (thin spaghetti)
1/4 cup Italian parsley, chopped

Directions:

In large fry pan saute bacon over low heat until half-cooked (approx 15 min) Do not crisp!
Add minced onions to bacon. Increase heat somewhat and saute another 10 min.

DRAIN FAT!

Add wine and pepper. Continue to stir and simmer approximately 30 minutes.

Cook pasta, al dente!

In a large bowl, mix:
4 raw eggs
1/2 cup Parmesan cheese
1 cup (1/2 pint) Heavy cream

Beat well. Add drained pasta to bacon mixture and briefly continue to cook over low heat while mixing well. Add egg mixture and mix/blend quickly, lifting pasta with forks. Do not let eggs coagulate!

Garnish with parsley. Serve immediately!!!
