1 c grated raw carrots
1 c grated raw potatoes
1 c grated raw apples
1 1/2 c raisins
1/2 c chopped nuts
1/2 c mixed peel
1 1/4 c flour
1 tsp salt
1 tsp each cinnamon, allspice & nutmeg
1/2 c butter, softened
3/4 c sugar

Mix butter and sugar together. Add rest of ingredients and mix well. Fill a sterilized quart jar 1/2 full. Seal. Process in hot water for 1 hour. This will keep as the jar is sealed. When ready to use, reheat the pudding. Serve with hot butterscotch sauce.

To make sauce: In a saucepan, melt 2 T butter. Let brown a little.
Whisk in 1/2 c brown sugar and 1 T cornstarch. Let it almost burn. Add 1 c water while whisking and bring to a boil.
