Pineapple Chicken Recipe

Boneless chicken breasts
salt & pepper
Batter:
1/2 c cornstarch
1/2 c flour
1/2 tsp sugar
1 tsp baking powder
2 eggs
1/2 c water
1 T soy sauce
Gravy:
1 large tin pineapple tidbits including the juice
1/4 c brown sugar
2 T white vinegar
2 T soy sauce
1 c chicken stock
1 green pepper diced
1 onion diced
2 T cornstarch in 1/4 c water for thickening
Toasted sesame seeds
Oil for frying

Directions:
Directions:
Cut chicken into 1" pieces, sprinkle with salt and pepper. Mix batter ingredients until smooth and add chicken pieces.This can sit in the refrigerator until you are ready to fry.
Heat all ingredients for the gravy in saucepan.Simmer for 20-30 minutes.Thicken with cornstarch.
Deep fry chicken pieces in oil and drain on paper towel. Keep warm in a 300 oven.
Pour gravy over cooked chicken and mix. Put in serving dish.
Sprinkle on toasted sesame seeds.Serve over rice.
Serve with white or brown rice and an Asian vegetable stir fry.
Add the gravy to the chicken just before you serve it or the chicken will become soggy
