Kielbasa (about 6 ounces)
Potatoes (4-5 medium size)
Half of an onion (yellow or white)
Half of a bell pepper (any color)

Tomato bullion
Olive oil



Directions:
Directions:
Peel the potatoes and then dice them, along with the kielbasa,
onion, and bell pepper.

Use enough olive oil to completely cover the bottom of a large skillet.
Heat the oil for a few minutes and then add all of the diced ingredients. Cover and cook on medium heat for about 5 minutes, until the potatoes
are just starting to turn soft.

Heat one cup of water and add tomato bullion to desired saltiness.
Add bullion to skillet, cover and heat on low about 5-10 minutes, until potatoes are completely cooked. Season to taste with black pepper.

(This goes well will poached eggs on toast.)
