Cranberry Rolls Recipe

1 cup milk
4 cups flour
¼ cup sugar
1 tsp. grated lemon
1 tsp. salt
1 cup margarine/butter
1 pkg. Active Dry Yeast
¼ cup warm water.
2 beaten eggs

Filling:
1 ½ cups finely chopped cranberries
1/2 cup sugar
1/2 cup raisins
1/3 cup chopped pecans
1/3 cup honey
1 ½ tsp grated orange peel
lace on greased baking sheets.

1. Scald 1 cup milk; cool to lukewarm.
2. In a large bowl combine flour, sugar, lemon,and salt
3. Cut margarine/butter into flour mixture until like cornmeal.
4. Dissolve 1 pkg. Active Dry Yeast in ¼ cup warm water.
5. Add yeast, milk and 2 beaten eggs to flour mixture. Mix lightly
6. Cover dough tightly. Refrigerate for at least 2 hours (up to 2 days)

To prepare the filling, Combine cranberries, sugar, raisins, pecans, honey and orange peel
Cook over medium heat. Bring to a boil and cook for 5 min. Cool.

Divide dough in half.
*Roll 1/2 into an 18” x 15” rectangle on a floured board.
*Spread ½ the filling on the dough.
*Fold dough into a three-layer strip 15 inches long.
*Cut dough into 15 strips
*Hold ends of each strip and twist lightly in opposite directions. Pinch ends to seal.
Place on greased baking sheets.
*Repeat with remaining half of dough and filling.
*Bake at 400ᴼ for 10-15 minutes or until done. Cool.
*Frost with powdered sugar frosting before serving.
