8 cups mashed potatoes (red are the best)
1/2 cup whipping cream
8 heaping TBSP butter
1 TBSP salt
4 cups flour

Directions:
Directions:
Mash or rice potatoes with a ricer. Add other ingredients except flour. Let cool to cold. (Put in fridge overnight). Add flour. With large ice cream scoop make into flat balls and put out on cookie sheet and put in fridge. Keep refrigerated removing and rolling one at time. Use a lefse rolling pin and roll as thin as you can. Bake on lefse grill with a lefse stick to turn the bread with.

Lefsa - the bread of the Norwegians - like Mom (Cheryl). Usually made to accompany Lutefisk - which is a whole other story. I never developed a taste for either, and I never learned how to make either. So give this recipe a try and let me know how it goes!
