3 tsp. cardamon
6 ½ tsp. coriander
½ tsp. cloves
2 ½ tsp. cumin
½ tsp. fennel
2 ½ tsp. fenugreek
1 ¼ tsp. black pepper
1 ¾ tsp. ginger
5 tsp. turmeric
1 ½ tsp. cayenne
1/2 tsp. cinnamon (optional)

Measure the powdered spices into a small bowl. Mix together and store in a cool dark place in a container with an air tight lid.

If you wish to use whole spices for the cardamon, coriander, cloves, cumin, and fennel you can toast them in a dry frying pan over low heat until the spice turns a darker colour. If using whole cardamon you will need to crack open the pods and extract the seeds before toasting. Let the spice cool and grind them into a fine powder using an electric spice grinder. Toasting the whole spice is optional. The curry powder will have a slightly courser texture and may have a slightly stronger flavor.
